My culinary training began at Charlie Trotter’s — for decades one of the finest restaurants in the world. That standard was set: not for what was acceptable, but for what was possible.
Twenty years of cooking at the highest level quietly pointed to the same conclusion: the most important ingredient in the kitchen was the one no one was examining.

Why Water
The realization didn't happen in a kitchen.
I spent decades avoiding water. It tasted awful to me long before I knew anything. I had no idea that instinct was telling me something true.
It was my own health that made me start paying attention. And it was my dad that made me a believer. Watching what happened when we got intentional about water changed everything.
The Water Chef was born the moment I realized this wasn’t a choice. It was a calling.
Purpose Beyond Commerce
Before there was a business, there was a marathon. In 2022, I ran the Chicago Marathon to raise funds for clean water. A portion of every experience continues to fund that mission.
